Biryani Recipe: Complete step by step guide on how to prepare perfect Biryani at home.

In India, food is not a food, Biryani is an emotion. It may be a family time, an occasion or simply a Sunday but in some way or the other biryani will make the day special. Any mouth will water at the scent of basmati rice coupled with a spicy aroma, and juicy meat (or vegetables).

I can remember the first time when I tried to cook biryani by myself. I had my fears, as biryani is a well known complex preparation. But once I reduced it to a simple form, I have realised that it is not rocket science. In fact, it may be highly amusing and fulfilling. And not to mention, that there is a special guide, designed to assist you, should you be a person who also wants to cook biryani, yet feel somehow intimidated by it.

In this article, I am going to provide an easy dish recipe of biryani which you can prepare in your kitchen as well. I will also give you some tips that help so that when your biryani is made, it comes out tasting so good, smelling so good and of course smacking good.


⭐Why is Biryani so Special?

It is believed that with the Mughals, Biryani was introduced in India. It has been added to each of the regions over the years.  Other examples include hyderabadi biryani with spicy hyderabadi taste, Kolcata with taste of sweetness (potatoes and eggs), and Lucknow with more aromatic and subtle Awadhi taste.

Either type will satisfy you, but the biryani secret is three things:

  • Long-grain basmati rice
  • A balanced mix of spices
  • Slow cooking (what we call "dum")

Biryani is not just a dish but an experience, most certainly thanks to this mixture.

Ingredients You Will Need

In this recipe, I will be showing how to make a simple Chicken biryani. Chicken can be replaced with mutton, fish or prawns, or mixed vegetables.

  1. For the rice:

  • 1 cup green peas (soaked 30 minutes)
  • 4 cups water
  • 2-3 cloves
  • 2-3 green cardamoms
  • 1 bay leaf
  • Salt to taste
    2.For the chicken marinade:

  • Chicken (or preferably bone) 500 grams.
  • 1 cup curd (yoghurt)
  • 1 Tb. ginger-garlic paste.
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt as needed

   3.For the masala:

  • 3 large onions (thinly sliced)
  • 2 tomatoes (chopped)
  • 2 green chillies (slit)
  • Coriander leaves (a handful)
  • Fresh mint leaves (a handful)
  • 2 tbs ghee (clarified butter) or oil.
  • At will (but highly implied):

A strand or two saffron steeped in 2 tbls warm milk.

Step-by-Step Method

Step 1: Marinate the chicken



Rub the chicken pieces and add curd, ginger-garlic paste, red chilli powder, turmeric, garam masala and salt. Close and wrap it up at least 30 minutes. You may refrigerate it in fridge 2-3 hours in case you have time. This makes the chicken soft and juicy.

Step 2: Cook the rice


Put it in a large pot with water (4 cups) and cloves, cardamoms, bay leaf, and salt and boil it. Cook until moist basmati rice is 70 percent cooked. Should not cook too long, since it will cook during the dum process. Strain rice and save.

Step 3: Prepare the masala



Heat ghee or oil in a large pan. Add the chopped onions and fry them till they are golden brown. This step is so important because caramelised onions give biryani its own unique flavour. Add coriander and tomatoes, mint leaves and green chillies. Bake until tomatoes become soft.

Now place the marinated chicken in the pan. Cook over half flame until the chicken is almost cooked and the masala has thickened.

Step 4: Layering the biryani



Take a heavy-bottomed pot. Chicken masala in a layer and then rice layer. Keep adding till rice and chicken are used up. Pour the saffron milk over the rice when you are using it. Add fried onions, coriander and mint leaves as an additional flavouring.

Step 5 Dum cooking (slow cooking)



Put a lid on the pot. You can even put the sides up with chapati dough to enclose the steam. Roast low and slow between 20-25 minutes. The flavours are mixed beautifully in the process.

And that's it! Your chicken biryani is ready.
